Fall Black Truffle (Tuber Uncinatum Chatin)
Also known as Uncinato Black Truffle or Uncinatum Scorzone, is a variety of truffle very similar to the Black Summer Truffle, much appreciated in the kitchen for its versatility. More fragrant than its double, the winter scorzone, and with a much more pleasant scent, the flavor of this truffle is intense, with notes that refer to hazelnut, porcini and parmesan.
The color of the soil (the inner part) tends towards a chocolate color and, when ripe, has branched whitish veins. The shape can be both rounded and flattened. The external warty part (The Peridio), similar to that of the summer truffle, has smaller and more accentuated warts than those of the Scorzone.
