How to take care of truffles after receiving them?

How do truffles arrive?

truffles as a highly prized ingredient, need a special care and need to be treated gently and correctly to have them as fresh as the first day. We usually deliver our truffles from ground to costumers less than 72 hours for long distance and less than 24 hours for shorter distance but you have to keep in mind that They will keep for 1 – 2 weeks if stored carefully, however the aroma and flavor will halve in about 5 days. Truffles are typically more than 70% water and will naturally lose 2 or 3 % of their body weight per day (moisture). If you wait too long, they will rot or dry-out.

How to clean truffles?

the first important point is to unwrap them as soon as they arrive to prevent them from rotting. The truffles that we arrive are so fresh that they might have some soil and sand on them. So first wash them under the cold tap water and then dry them to not affect the aroma and the taste.

How to keep fresh truffles?

After washing and unwrapping, place them individually in a clean tissue paper or a breathable container keep fresh truffles in the coolest part of the fridge, ideally at 1 to 2°C.However, be careful not to freeze them by accident and keep them in a dark and air tighter space (zip locks, glass jars ,…)to keep their aroma and their freshness. Then check on them daily and wipe away any condensation that collects inside the container and change the kitchen towel every 24 hours and rewrap them.

How long do fresh truffles survive?

For fresh truffles to be enjoyed at their best, they should be consumed within 4 to 5 days. However, the autumn variety of the black truffle, Tuber uncinatum, can retain its flavor for up to two weeks, but the highest-quality white and black truffles are best enjoyed within a few days of delivery.
Suggested storage ways:
1.Put an fresh egg in the container of your fresh truffles to have a rich delicious omelet with a touch of truffles. The flavor of truffle will crawl in to eggshell through it’s pores and bring out the best of it.
2.Do not store truffles with rice. cause it will absorb the moisture of truffles and it’s aroma and speed up the rotting process.
